If there is a cake everyone like then that’s a chocolate walnuts cake. It is a very delicious and exclusive cake. You can make it anytime you want, but on Christmas and New Year celebrations it takes a very special place on the table.
Break eggs. Separate egg whites from yolks, pour it in the deeper vessel, add 250 g of sugar and whisk it all well until you get a solid foamy mixture. After that, add to this mixture 250 g of walnuts. Half of the walnuts should be finely ground with a grinder and half of it finely chopped with the knife edge by hand. Whisk it all well, spread the half of this mixture into the average sized rectangular metal baking pan. The thickness of this spread mass should be about 0,5 cm to 1 cm depending on the baking pan size. Put it into the oven and bake it on the temperature 180 C for about 15 minutes until the crust becomes golden brown. When it is finished, pull out baking pan from the oven, cut the crust vertically into two equal parts, extract them from the baking pan and leave them to cool off. This way we get two layers for filling.
Then repeat the procedure by spreading the second half of the mixture into the baking pan and bake it in the oven like previous crust. This way, you’ll get 4 crust layers.

On the hot stove plate, put the cooking pan, pour 10 egg yolks and 10 tablespoons of sugar and whisk it well. Mix it while cooking until it becomes a dense mixture (it resembles honey). Then take the cooking pan from the plate and leave it to cool. Add 250 g butter and previously prepared 100 g melted chocolate and mix it all well.
Take crusts and cover each layer with this chocolate cream. Let it get cold. It’s great with a cup of tea or coffee.

Take all the dry cake ingredients, put them in a deep bowl and stir them. Use a large whisk. Now, take a hand mixer and mix all the wet ingredients. Put the wet ingredients into the bowl with the dry ones and mix until you completely incorporate all the ingredients.
Take butter and grease the pan. Put the cake into the pan and bake on 180 degrees. The oven needs to be preheated. Bake approximately 30 minutes, but check your cake since this mostly depends on the oven. When the cake is finished, take it out of the oven and cover with a tea towel. Keep the cake at room temperature before you put a chocolate glaze over it.
3 ounces walnuts
1 and ¼ cup of almond flour
1/3 cup coconut flour
1/3 cup cocoa powder
A little salt
1 tablespoon baking powder
¼ cup melted butter or walnut oil
1 teaspoon vanilla
1 teaspoon stevia
Chop the chocolate and put it, along with butter and heavy cream into a microwave bowl. Cover the bowl with waxed paper and microwave this for 30 seconds. After you take it, leave it a minute and then mix gently.
Put this glaze in the middle of the cake and then spread it with a wider knife or spatula. You can add chopped nuts, walnuts or almonds over it. Leave it in the fridge for at least 30 minutes, cut and serve.
Chocolate glaze ingredients:
50 g intensive dark chocolate (more than 70 percent cocoa)
¼ cup heavy cream
2 tablespoons butter or coconut oil (held at room temperature)
Before you start, keep all the ingredients at room temperature for a while. Preheat the oven at 180 degrees. Grease the pan you are going to use with a little oil and put a baking paper.
Take a bowl and put flour, cocoa, baking powder, sugar, and salt in it and mix well. Then add eggs, oil and vanilla extract. Whisk all gently and slowly until you get a nice form without any bumps. Next, add walnuts and chocolate chips. Mix again.
Pour this mixture into the pan and sprinkle with extra walnuts and chocolate chips. This shouldn’t be taken away from the measure tended for the cake. Use additional walnuts and chips.
Baking time is approximately 45 minutes. Before this time expires, take a kitchen knife and cut a cake in the middle. When the knife comes out clean, the cake is baked.
When it’s done, leave it to get cold, and then take it out. Cut and serve.
