Greek Easter soup

Greek Easter soup is cooked for Easter. The soup is very tasty and this soup will love the whole family.

Boil chicken in the 3 cups water for 50 minutes. Remove from heat; strain broth and set aside. Chop chicken into pieces. Cook onion, dill and parsley in butter with 1 teaspoon salt and a dash of pepper until soft and transparent, being careful not to brown. Add chopped chicken and cook over moderate heat for about 5 minutes, stirring frequently. Add chicken broth and enough water to make 2 quarts liquid; bring to boil, add rice and carrot. Reduce heat and cook until rice is done. Remove from heat and blend in egg−lemon sauce.

Egg−lemon sauce:

Beat egg whites with water until stiff. Blend in egg yolks, then add lemon juice, beating until thick. With a ladle, add a small amount of hot broth to the egg mixture, blending quickly. Pour sauce into soup and serve immediately.

1/2  chicken
7cups water
12/cups butter
4 scallions finely chopped
1/2cups fresh dill
1/2cups parsley
1/2cups rice
1 carrot
7  eggs (egg−lemon sauce)
tbsp water (egg−lemon sauce)
3 lemons juice (egg−lemon sauce)

Greece soup split peas

Greece soup split peas is healthy and delicious soup, full of protein and a good alternative to meat for vegetarians. As is evident by the name, this pea soup is very popular in Greece.

Wash split peas and place them in a large saucepan.

Add water to cover peas and let them boil for half an hour.

Add two whole onions to the saucepan and boil for 15 minutes.

Remove onions and puree the pea mixture in a blender or pass through a colander.

Add oil, lemon juice, salt and pepper, to each individual plate.

Greece soup split peas serve cold or hot with olives.

1/2 kg split peas
80 ml oil
1/2 lemon juice
salt (to taste)
pepper (to taste)
8 cups water
1 cup olives
